Here's a SUPER easy dinner I whipped up tonight. I didn't really measure a damn thing.
1/2 box of pasta (I used farfalle pasta and it wasn't an exact measurement)
Jimmy Dean (or something similar) sausage - 1/2 of one of those tube things
1 head of broccoli, chopped into bite size pieces
Fresh basil, for the hell of it, torn into smaller pieces
1 can of stewed tomatoes
butter (optional)
fresh parmesan (optional)
Boil a pot of water and add pasta. Cook until al dente.
Brown the sausage in a fairly large skillet. Add the broccoli and basil. Let these mingle for a little bit, until broccoli turns a brighter, deeper green. It should still be a bit crunchy.
Add can of stewed tomatoes and work through the broccoli/sausage mix. Add pasta and work that through, too.
I added butter, for a little more depth. Like a quarter stick of butter. I mean it's BUTTER, y'all. That's why.
Then I grated parmesan cheese into the skillet and mixed it in until it melted. You can take the skillet off of the heat at this point.
I added parmesan as a garnish when I made my own plate.
You could totally use any kind of vegetable for this: spinach, squash, asparagus. I liked the green and red contrast.
And there's plenty of leftovers!
